Talamanca peppercorns from Ecuador are very highly perfumed--their
flavor notes are floral, as opposed to fierce. A little bit goes
a long way, but they are as spicy-hot as Tellicherry with a flavor
that flows across the mouth, building slowly, then tapering off
again. Very cool. They're certified organic too. Bill and Dan Brugger
of Florida-based Brugger Brothers have imported the freshly harvested
black and white peppercorns since 1992. They're only available by
mail; a 4-ounce bag of whole black peppercorns is $7.75; the white
peppercorns cost $8.75. Shipping is $3.50.

Pepper Pointers
All black peppers are not alike, say South Florida's Brugger
Brothers, who are importing and distributing aromatic Talamanca
Whloe Black Peppercorns to local stores and restaurants (including
Janjo's, Darryl & Oliver's Cafe Maxx, Yca and Caffe Abbracci,
among other notables). The peppers are organically grown on family
farms in the Costa Rican rain forest, hand-picked and sun-dried---not
oven dried or irradiated.
